Shrimp & Greens Salad

Not only is this salad bustling with flavor, but I love it for the CR*R*RUNCH!  shrimp avocado salad

Crunchy snacks and foods make us feel more satisfied and fulfilled (think biting into a crisp, juicy apple Vs. eating apple sauce…  what’s more fun?  (and enjoyable)) …but I digress :)

Ingredients for 1 serving:
1 lime
7 cooked small/med shrimp, “cubed”
Handful of cilantro
1 scallion rod (you can substitute onion, level Tbsp should do)
1/2 green pepper
4 or 5 inches of cucumber, seeded
1/2 avocado

Dice and cube all, sprinkle with sea salt, squeeze out the lime, combine and enjoy!
So refreshingly simple!
