I’ve adapted this recipe from one of my favorite Ukrainian salads that mom used to make. The original was 3 ingredients: cucumbers, sour cream and salt. Mine is a Mediterranean twist, perfect for a hot summer day or a light dinner salad or side dish any time of year.
Cucumber – preferably seedless
Yogurt – goat is better for digestion & assimilation
Scallion – optional, adds a delicious dimension
Super simple, super quick. Peel cucumber, slice. Sprinkle with salt. Add a desirable amount of yogurt and squeeze in lemon juice to taste. Mix up & enjoy!
